Our tour session will last 45 minutes. Ajaw Chocolate’s traditional Chocolate making tour is based on a process that dates back to 2,000 B.C. and includes learning how the bean is farmed as well as how it is prepared for chocolate making. The main focus is crushing cacao beans on a Mano and Matte. They crush the beans to a paste and then dissolve it in hot water. Honey is then added as a sweetener and chile for flavoring. A second drink is prepared with this cacao paste dissolved in water and sweetened with honey but flavored with cinnamon and spice instead of chile. At the end of this session, we will share a small sample of milk and dark chocolate from Ajaw Chocolate.
